Normal auto engine coolant temp since the 1990s has always been between 195 - 220F depending upon make, model, options ...... That is NORMAL. If it is extremely hot outside, that range will slide up.
Why is it hotter at freeway speed? LOAD. You are pushing a brick through the wind and the engine is WORKING to do it. I would be more concerned about your Trans temp than the engine if I was you.

Not sure how much I would trust accuracy of torque pro, in order for me to monitor transmission temp I had to add a custom PID.

OEM CAI(COLD AIR INTAKE) works for me! Make sure the cooler air flows in(not restricted) & sealed to the tb.
Doesn't appear to be restricted, although I don't know if that tubing that goes into the fender is in itself restrictive. Read somewhere of people removing it and adding something larger. Any thoughts on that? Also people adding snorkels to allow cooler air picked up from up above. Or actually making those fake vents/intakes near the window pillar functional.
The OEM air intake gets its air from inside the inner fender behind the turn signal. That is already functional, and is the basis for the entry of outside air (air from outside the under-hood environment) into the intake system. The entire inner fender behind the fender liner is open, there is no tubing. We have tested the utter snot out of that OEM intake source and that is why we retain it in all of our H3 systems, the only mod being to the 06/07 inlet through the fender for those intakes. Snorkels are for the "look at my snorkel" type who think they look cool, but in reality accomplish little.
Noted on the stock CAI, not gonna change a thing except a clean filter every so often.
Quick Update as of Today. I had a machine shop shave down the engine outlet housing so I can finally fit the inline T-stat that I got. Installed it, went for a test drive and no difference. Still running 205-210max on the street and 220 on the highway. Transmission Temp pinged around 233-235F...
