I personally don't think that running a higher stall converter on a heavy rig like this is a good idea, a lot of driveline parts that will see extra stress and if you tow there is going to be a lot of additional heat build up.
flash higher? I'm only going 300RPM's higher then stock. I do tow my trailer, so I will defiantly be looking into a better trans cooler to keep the heat down. Changing up the difs as well.

Most needs for a higher stall are due to a larger cam install. and you need a looser converter to allow the engine to idle in gear. your stall should be chosen to work the power band of your cam.
