Recommendation on oil and thermostats

I use mobile one fully synthetic but I see multiple kinds of mobile one there is the regular full synthetic which I use. There is one for trucks and suv, there is one for high mileage . They all 5w-30 any difference between them? Or which one is better for the hummer ? Maybe runs cooler?
also for the thermostats. I see the acdelco opens at 195. There is gate at 190 and there is motorad that open at 187. Which one is better? And which one you recommend ?

One of my best bud's father retired from Mobil Oil about a year ago, he says the Mobil 1 synthetic is all nearly identical and/or not different enough to do diddly squat= the same stuff. The exception is the High Miles version which has what he calls gasket expansion additives for older vehicles with dried out seals/gaskets. The plastic jugs are all marketing BS.
The T Stats temp differences aren't a basis for picking one over the other, GM wants higher temps for better emissions. If a lower temp TStat makes you happy, use one, but it won't make the truck run at any appreciably lower temp once full operating temp has been reached. In other words, 2-3 degrees +/- is irrelevant. I used the ACDelco on my old 07 because I wanted to do it one time and forget about it, then sold the truck.

okay thanks doc yes I use just the regular full synthetic mobile one . But I was just confused with all the other kinds but I’ll stick to the one I use
as for thermostats my car run at idle 207-210
and on highway like 198-202
i was just thinking maybe my thermostats is acting up or is that normal? I looked at the thermostats and I see some have different opening temperature thought maybe it can help cool
