Clearly we're viewing completely different engine removal procedures. I'm not sayin' they're doing it correctly, just observing what others are doing.

I guess so. It would make no sense to remove an exhaust manifold nut and then attach the hoist chain (the stud would likely be too short anyway), when there are threaded holes available in the front/rear of the head to use. And both 5.3 engines that I've owned with broken manifold studs never had the engine removed, so that couldn't have been the cause.

I would say make sure it is a 5.3 under the hood, just saying
