Has anybody changed the ring and pinion in their H2? If so what gear ratio would you suggest for 38 to 40 inch tires? What is the stock ratio?

It would depend on what you want more..........

Typically,

Lower gears give you good start up speed off the line but top out thus limiting your higher speeds down the road.

Higher gears are slow to start off with at the beginning, but give you more top end speed.

Running bigger tires requires more torque on the bottom end to get them moving with any true need of power.

You cannot have both.
