Don't know if this will help but a 2003 service manual shows 5 quarts of Dexron III for pan removal and 11 quarts of same for an overhaul. But, it does also show 12.1 quarts dry ? Maybe that would be if the cooling lines were "dry" also ?

Usually 12 quarts means they're doing a flush and not recommended because 3 out 5 times it means you'll end up replacing the tranny. The 5 quarts means it's a pan filter drop and top off which is good enough and will do the job. I did it to my 02 and tranny temp drop significantly. Shifts harder and crisp when racing.

So I was thinking about chaning out the ATF to Amsoil ATF and putting on a larger tranny fluid oil cooler. So why would someone make a comment about the tranny going out if you change out the fluid completely, (pan and torque converter fluid change)?

There is only two ways to service the trans, remove the pan and replace the filter, refill with 5-6 qts ATF. There is no way to drain the torque convertor. The other way is to take it to a shop and have them flush the fluid. I prefer the pan/filter method. Amsoil Syn ATF is good stuff. The pan gasket is reuseable so all you need is a quality trans filter from any GM dealer and some ATF.
