There appears to be quite a range of values people are getting with the 5.3, but I'm confident that 20mpg is realistic, but probably the best as well. I will have to find a dealer that doesn't lie so badly. Thanks for the info guys, and feel free to post some more figures.

+1 on this one. I've had both the 3.5 and 3.7 I5 and now the 5.3 V8.
With normal driving, the mileage penalty for the V8 is about 1mpg, a great trade off for power if you need it. Probably affect the resell value as well if you are like me and can't keep the same one too long.
My regular H3 with I-5 gets TERRIBLE gas milage. about 14 in town from what I can calculate. High way its worse because of the hills around here. The i-5 was an extremely small motor for these. It wont hardly carry its self up a small slope without turning 3000 rpms at 75mph. I can imagine the V-8's would be equal if not better because it would have enough torque to keep the RPMS down up hills and around town.
I have a 09 with the I5 I drive like a goddamn idiot to be honest as far as acceleration goes. I have only 2.5k miles so I may have some breaking in on my engine but I get about 12 city 14-15 highway If i have the v8 I am pretty sure I would be looking at 10mpg city and about 13 highway. Yes your getting more power to move your box of a truck with the v8 but your also using more gas per rotation of engine. Your just getting more pulling power which gives you better acceleration. A V8's mileage wont be better then the I5 but if you wanna reach speeds faster then the v8 may be for you.
I have a 06 H3 and I was getting 16MPG with mostly highway milage. I filled the tires to max PSI and it is now 17MPG.I am switching out the exhaust this weekend so I hope it gets better. Can't worry too much about MPG if you drive a hummer.
In august of 09 I drove from FLA to ME, on open highway w/ cruise contol i got 22 w/ my 09h3t adv. I got this average over 500 miles but that was as long as I could stand driving miss daisey. now w/ my normal lead foot self doing 80+ the best I got highway was about 13. I average 15 around town but I'm lucky & don't have to use the Hummer as a daily driver
