2 part questions require 2 part answers.
Q) "will a nav unit fit and work in my 2003 hummer h2 with just plugging it in"
A) Yes, but imho the GM nav units are best used as door stops and paper weights. I have had two different ones, liked them both, both plug and play essentially assuming you have the correct harness adapter and remember to either add the included GPS helix antenna or plug in and use the one on the OnStar module (which I dont have, I removed my OnStar module which gave me lots of nice usable space in the dash for a HAM radio install)
The units I have used are the Pioneer AVIC Z130BT and the Kenwood DDX812. Like them both, period
Q)"will a 2008 gmc sierra stock radio fit and plug into my 2003 hummer h2"
A) Yes and no, Yes it can be made to fit, sort of. Sure you can plug it in, but you will need to have a harness adapter to make that work and you will lose some functionality. I dont recommend it at all.
Bottom line, you will spend about the same getting a good working OEM nav unit as you would getting a nice after market.
Some of the pieces you will need if you DIY are:
Axxess GMOS-04 http://axxessinterfaces.com/
An adapter harness of your choice...
And a dash kit.
Bring plenty of patience, as center console and center dash console removal is tedious at best. While its out change out the OEM aluminum bolts with stainless steel ones from somewhere like Teakatoys Hummer Accessories, Hummer Parts
