Cleaned out my engine bay for the first time, looks awesome. I've got a check engine light though that reads as the knock sensor. Being that it's most likely wet, will it dry out? Where is the knock sensor located?

If/when you clean the engine compartment, blow high pressure air to dry, or simply leave the hood open on a hot sunny day and it will dry out on it's own. Wait until it has dried out, clear the code, and recheck.

Lol. Welp, I used my electric blower and dried everything out, nice and dry. I suppose it just needs to dry out further. What are the odds that it shorted and needs to be replaced?
LIkely not going to dry out and go away unless you physically remove the intake manifold to gain access. You might get lucky though and it would probably dry faster with the hot engine running. On any GM LS engine with the plastic intake, never, ever, ever direct any water towards the top of the engine. It will get past the foam block, run down the valley pan and mess up the knock sensors.
The problem is the sensors have a big rubber plug that seals water out but as they age the big rubber plug gets hard. Water gets down into the well that the sensor is in and shorts it out. Common issue on the full size GM trucks and tons of write ups online on how to replace the sensors if it comes to that. It is a semi involved project though. If you do replace them only get genuine ACDelco ones.

Just to be clear, the knock sensors don't "short", however water intrusion prevents the signal sent. They do have a good chance of corrosion, requiring cleaning/sealing contacts or replacement.
There's a complete set on da'bay cheap, pull'em & replace, and clean the old set for a backup.
