I have a set of 37x12.5x17 tires left over from a past project and am thinking of putting them on my wifes '06 H2. Will they fit?

yes, they'll fit. you may want to adjust the torsion bar to get some extra clearance (get an alignment after about 50-100 miles). mine are 37x13.50x17, only rub the back fenderwell plastic at full turn, no frame or sway bar rub. it will also depend on your rim offset, i've seen stock tires rub, so there's no guarantee.
